Ingredients:

2 (10 ounce) cans chunk chicken, drained

2 (8 ounce) parcels cream cheese, softened

1 cup Ranch dressing

3/4 cup pepper sauce

1 1/2 cups shredded Cheddar cheese

1 bunch celery, cleaned and cut into 4 inch pieces

1 (8 ounce) box chicken-flavored crackers

Instruction on buffalo chicken dip:

1.Heat chicken and hot sauce in a skillet over medium heat.

2.When it is heated thoroughly, stir in cream cheese and ranch dressing.

3.Leave to cook while continuosly stirring until it is fully combined and warm.

4.Add half of the shredded cheese to the combination, and switch the mixture to a slow cooker or just lower the heat to the bottommost point.

5. Dust the left over cheese over the top and cover.

6.Allow to cook on Low setting until it gets hot and bubbly.

7.Serve with celery sticks and crackers.

ROTISSERIE CHICKEN RUB RECIPE

The taste of rotisserie chicken is greatly influenced by the rub that is used to smear the chicken before cooking. Preparing a rotisserie chicken rub is much easier than you imagine. Just adhere to any of the two recipes below and you will definitely be surprised with the results.

2 teaspoons paprika

Instructions:

1.Mix all the ingredients apart from chicken and onion together.

2.Rinse the chicken and pat dry.

4. Place a quartered onion within the chicken.

5.Cook on a rotisserie grill for approximately 1 hour and 15 minutes for an average 4-pound chicken.

Tortilla Soup Recipe

This Authentic Mexican soup contains all the foods that are most commonly recognised as Mexican food. Salsa, avocado, cilantro and fresh hot tortilla chips are all included in tortilla soups. Below is a typical tortilla soup recipe with ingredients and method for cooking.

Ingredients

6 (6 inch) tortillas, preferably more old and dried out

¼ cup grape seed oil, peanut oil, or other high smoke point oil

1 small onion, chopped (½ cup)

2 cloves garlic, finely chopped

1 medium Anaheim, poblano or jalapeño chile, seeded, veins removed, and chopped

4 cups chicken broth or homemade chicken stock

1 can diced tomatoes, undrained

½ teaspoon coarse salt

1 ½ cups shredded cooked chicken

1 ripe medium avocado

‘½ cup shredded Monterey Jack cheese

Chopped fresh cilantro

1 lime, cut into wedges

Method

1.If using somewhat old, dried out tortillas, that is ideal. However, if not, and somewhat fresh tortillas are being used, put them on a baking sheet and place them in an oven at 200ºF for 10-15 minutes to dry them out. It is ideal to start with tortillas that do not have a lot of moisture in them. Slice the tortillas is two halves; slice each half into ¼ inch strips. In a 3-quart saucepan, heat oil over medium-high heat. Fry strips in oil, 1/3 at a time, until light brown and crisp. Take out of pan; drain on paper towels. Reserve.

2.Heat the left over oil in saucepan over medium-high heat. Prepare onion in oil for 2 minutes, stirring often. Add garlic and chill; cook for 2 to 3 minutes, stirring frequently, until vegetables are crunchy. Mix in broth, tomatoes and salt. Heat until boiling. Lower heat; cover and simmer for 15 minutes. Add chicken’ heat until hot.

3.To serve, peel and pit the avocado. Slice into 1 inch slices. Divide half of the tortilla strips among 4 individual serving bowls; ladle in soup. Top with avocado and cheese; garnish with remaining tortilla strips and cilantro. Serve with lime wedges.

Chicken Salad is  loaded with flavours if made with the  right recipe. You can have chicken salad  by itself or you can pair it with sides likes lettuce, avocado; it  is ideal for sandwiches.

 

In addition to chicken, chicken salad can be made with  a variety of other ingredients such as bacon, sliced apples, peanuts, chopped peaches, seedless grapes, fruits, raisins, pineapples, hard  cooked eggs, cucumber, peppers, English Peas, olives and a whole lot more. The flavours can also be adjusted by using different spices like cumin and curry.

 

Ingredients

4 cups diced poached chicken

1 stalk celery, cut into ¼ inch dice

4 scallions, trimmed and thinly sliced or ¼ cup sweet onion cut into ¼ inch dice

1 ½ teaspoons finely chopped parsley

1 cup prepared or homemade parsley 

1 cup prepared or homemade mayonnaise

2 teaspoons strained freshly squeezed lemon juice

1 teaspoon kosher salt

Freshly ground black pepper

 

Directions

 

1. In a mixing bowl,  mix together the chicken, celery, scallions and herbs.  Place aside.

2. In a small bowl,  mix together the mayonnaise, lemon juice, mustard, salt and pepper to taste. Add to the chicken and mix  gently until combined.  Refrigerate until  ready to serve. 

3. Serve on a bed of lettuce with sliced tomatoes, in half an avocado or in a chicken club sandwich  made with artisanal bread,  crunchy smoked bacon, vine-ripened tomatoes and lettuce.

Poached Chicken for Salad10 sprigs parsley2 sprigs fresh thyme1 small onion, cut into two halves1 small carrot, cut into two halves1 stalk celery, cut into two halves3 pounds chicken breasts halves, on the bone and fat trimmed5 to 6 cups chicken broth, homemade or low sodium cannedDirections1. Place parsley, thyme, onion, carrot, celery, and chicken breasts in a medium saucepan. Cover with the broth, and bring just to a boil. turn down the heat to very low and cover. Poach the chicken for 20 minutes or until firm when touched remove the pan from the heat, uncover, cool the chicken in the liquid for half an hour.2. Move the chicken to a cutting board and reserve the liquid. Bone and skin the chicken and cut the meat into 1 inch cubes. Throw away the bones and skin.3. Pour off the broth and store, covered, in the refrigerator for 3 days of freeze until later use. Skim off any fat from the surface of the broth before using. This recipe makes 4 cups diced chicken or 4 to 6 servings.

Buffalo wings are called so because they were initially invented  in Buffalo, NY. Traditionally Buffalo wings are deep fried, however, if you do not have a deep fryer at home, but want to cook a meal of Buffalo wings, it is suitable  to use a recipe that calls for  the wings to be broiled after they are marinated in a spicy sauce.

 

Ingredients:’

Wings

2 lb chicken wings ( roughly 12 wings)

three Tbsp butter, melted

4 Tbsp bottled hot pepper sauce

1 tbsp paprika

½ tsp salt

½ tsp cayenne pepper

¼ tsp black pepper

Celery sticks (optional)

Blue Cheese Dip

½ cup sour cream

½ cup crumbled blue cheese

½ cup mayonnaise

1 tbsp white wine vinegar or white vinegar

1 clove garlic, minced

Approach

Wings

1.Chop off wing ideas. Either  throw them away or  reserve for other use  such as  making stock.  Chop wings at the joint.  Place chicken wing pieces in a plastic bag.  Put aside.  Note: when  chopping  raw chicken, it’s most effective to use a  cutting board reserved  just for  chopping  uncooked chicken.  clean thoroughly when  done. Don’t  allow  uncooked chicken  drippings to come in contact with other food.

2.Prepare a marinade by  mixing together the melted butter, hot pepper sauce, paprika, salt, cayenne, pepper, and black pepper. Pour all  but 2 tablespoons of the marinade over the chicken  pieces inside the plastic bag. Keep back marinade for  coating after the  pieces  are removed from the oven.  seal bag and let marinate at room temperature for  half hour. When marinating is  complete, drain marinade and  throw away bag. 

3. Put wing pieces on the rack of a broiler pan. Broil 4 to 5 inches from the heat source for  roughly 10 minutes on every side, until chicken is tender and  not pink.  

Take out of oven and brush with reserved marinade.

Short bread Cookies Recipe

The secret to making good shortbread is to employing a high quality butter and pure vanilla extract. Butter in the States is rating based on flavor, color, texture, scent and body and one easy way to tell the quality of the butter is by the letter code or numerical number noted on the butter’s parcel. The maximum grade is AA (93 score), then A (92 score), followed by B (90 score). Shopping for vanilla extract can also be different as there are so many choices. The first thing to do is to make sure that it is labeled “pure”.

Short bread Cookies Ingredients

• 3/4 cup butter, softened

• 1/4 cup sugar

• 2 cups all purpose flour

Shortbread Cookie Recipe Directions

Preheat oven to 350 degrees.  Mix butter and sugar in large bowl.  Stir in flour.  If dough is crumbly, stir in another 1 to 2 tablespoons of softened butter.

Knead dough to 1/2 inch thickness and cut dough with cookie cutters into desired shapes.  The dough can even be cut with a tool into wedges or strips for interesting designs.  Bake about 20 minutes or until firm.  Remove from oven and place on a wire rack to cool.

Butter cookies

Ingredients

1 cup butter

1 cup white sugar

1 egg

2 2/3 cups all-purpose flour

1/4 teaspoon salt

2 teaspoons vanilla extract

Directions

1.In a big bowl, mix together the butter and white sugar until light and fluffy. Stir in the egg, then Mix in the vanilla. Mix the flour and salt; Mix into the sugar mixture. Cover dough, and chill for at least 60 minutes. Chill cookie sheets.

2.Preheat oven to 400 degrees F (200 degrees C). Press dough out onto ungreased, chilled cookie sheets.

3.Bake for 8 to 10 minutes in the heated oven, or until lightly golden at the edges. Take them off the cookie sheets to cool on wire racks.
